With ssh program it's quite simple: with the -w option 2 new (tunnel) interfaces are created (for example tun0 and tun1), and it's possible to create a vpn for all type of traffic.
With stunnel you could use tappipe ftp://stunnel.mirt.net/tappipe/ for this purpose. Best regards, Mike
