Ahh but you can, this is a common misconception, almost any service (including Microsoft SQL Server and Stunnel)can be started as a normal user, and infact it is recommended that if its possible that you do.

I believe that it is sometimes useful for the passphrase to be requested by Stunnel on startup (on the client side), but you all make valid points.
