Does anyone have any documentation on how to setup stunnel as a Windows Service? I currently have it installed on a Windows Server 2012 R2 Standard. I noticed that stunnel stops running as soon as I log off of my RDP session on the server.

If you look at the documentation, there are some instructions that work quite well.
As an administrator:
stunnel -install net start stunnel (this only has to be done the first time after the install)
services.msc (or click on services in the admininstrative tools from the Control Panel) right click on stunnel and select properties For startup type select Automatic (delayed start)
